Ingredients:
For Marinating the Chicken:
- 500 gm bone-in chicken pieces
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste

- 1 teaspoon chicken masala
- 1 teaspoon biryani masala
- 1 tablespoon mustard oil
- Fried Onions(fry onions till golden brown color)
- Salt to taste
- 3 Green chili
- Freshly coriander and mint for garnish
For the Rice:
- 2 cups basmati rice
- 4 cups water
- 2-3 green cardamom pods
- 2-3 cloves
- 1 cinnamon stick
- 2 star anise
- Salt to taste
For Biryani Masala:
- 2 large onions, thinly sliced
- 1/2 cup cooking oil or ghee
- 2 teaspoons biryani masala
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- Fresh coriander and mint leaves for garnish
For Layering:
- Saffron strands soaked in water
- Fried onions
- Ghee for drizzling
Instructions:
1. Marinating the Chicken:
- In a large bowl, combine yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala,chicken masala,biryani masala,mustard oil, and salt.It will give a delicious flavor to Chicken Biryani.
- Add the chicken pieces, ensuring they are well-coated with the combined chicken biryani masala.
- Cover the chicken and let it marinate for at least 1 hour for enhanced flavor.
2. Cooking the Rice:
- Rinse the basmati rice with cold water till the water runs clear.
- In water soak the rice for 30 minutes.
- In a large pot, bring water to a boil on high flame.
- Add green cardamom, cloves, cinnamon stick, black pepper,star anise,ghee and salt.
- Let the water boil on high flame.
- Add the rinsed rice.
- Cook the rice until it’s 70-80% done. It should still have a slight bite. Drain and keep it aside.
3. Biryani Masala Preparation:
- In a deep pan, heat oil over medium heat.
- Add Green chili,whole spices(cardamom,cinnamon,bay leafs, cloves,black pepper)
- Add cumin seeds and sliced onions. Saute until the onions turn golden brown.
- Add chopped tomatoes(tomatoes are optional you can add it or skip it), biryani masala, and coriander powder. Cook the tomatoes until they are soft and the oil separates.
4. Cooking the Marinated Chicken:
- Add the marinated chicken to the chicken biryani masala.
- Add biryani masala,chicken masala and coriander powder.
- Cook on medium heat until the chicken is cooked properly and the oil starts to separate.
5. Layering the Biryani:
- In a heavy-bottomed pot, start by layering half of the Chicken masala then add partially cooked rice then pour it with ghee, saffron water ,fried onions,fresh coriander leafs and mint leafs.
- Then in next layer do the same process
- Spread the cooked chicken equally over the layered rice .
- Add the remaining rice on top.
- Drizzle saffron water, fried onions , and ghee over the rice.
- Cover the pot with a tight lid or use aluminum foil to seal it.
6. Dum Cooking:
- Place the biryani pot in the preheated oven for 20-25 minutes. This dum cooking allows the flavors to meld, and the rice and chicken to cook completely.
- Alternatively, you can cook it on the stove top on low heat for 30-35 minutes.
- Or if you don’t have oven then you can replace with TAWA.
- Place a tawa (griddle) under the pot to avoid direct heat.

7. Garnishing:
