  •  1 teaspoon coriander powder
  •  1 teaspoon garam masala

Instructions:

Preparation of Aloo Gobi Recipe:

  • Clean and cut cauliflower(Gobi) into florets size as you want.
  • Peel and cube the potatoes bite size .
  • Finely chop the onion and tomatoes.
  • You can make Paste of Onions, Tomatoes for thickness
  • Optional: Add peas for an extra burst of sweetness.

Frying Aloo Gobi:

  • For Aloo Gobi recipe let heat oil in a deep fry pan over high flame.
  • Till the heat oil ,wash aloo,gobi mix salt and turmeric powder .
  • 1st fry Gobi in hot oil then Aloo till golden brown color, fry it 70-80%.
  • Keep it aside for use.

Tempering the Spices:

  • Heat oil in a deep pan over low/medium heat.
  • Add green cardamom, cinnamon,5 cloves/black pepper,green chili.
  • Add cumin seeds ,let them splutter for a few seconds for release their aromatic flavors.
  • Add chopped onions/paste and cook until they turn golden brown. Stir  infrequently for even cooking.
  • Add ginger-garlic paste and cook until the raw smell of ginger-garlic goes away.
  • Now add a little bit salt and coriander powder and mix it with spices
  • Pour paste tomatoes/chopped tomatoes and cook until the oil begins to separate from the mixture.

NOTE*Adding salt in spices gives even taste and it doesn’t feel like saltless spices.

  • Reduce heat to low and add turmeric powder, red chili powder, stir well, pour 1/2 cup water and mix it with spices make sure spices are distribute evenly.
  • Add the cauliflower(Gobi) florets and aloo(potato) pieces, and make sure they are well coated with the spice mixture.
  • Increase the heat to medium and saute for 5-7 minutes, allowing the aloo gobi to absorb the flavors.
  • Take a lid and cover the aloo gobi and let them cook on low flame.Stir infrequently to prevent the aloo gobi stick in pan and ensure even cooking.
  • If you want to use peas in aloo gobi recipe, add them to the mixture and gently combine. Let it cook for an extra 5 minutes.
  • Sprinkle garam masala over the Aloo Gobi recipe, giving it a final touch of aromatic spices. Stir gently to mix everything evenly.
