- Peel and cube the potatoes bite size .
- Finely chop the onion and tomatoes.

Frying Aloo Gobi:
- For Aloo Gobi recipe let heat oil in a deep fry pan over high flame.
- Till the heat oil ,wash aloo,gobi mix salt and turmeric powder .
- 1st fry Gobi in hot oil then Aloo till golden brown color, fry it 70-80%.
- Keep it aside for use.

- Heat oil in a deep pan over low/medium heat.
- Add green cardamom, cinnamon,5 cloves/black pepper,green chili.
- Add cumin seeds ,let them splutter for a few seconds for release their aromatic flavors.

- Add ginger-garlic paste and cook until the raw smell of ginger-garlic goes away.

- Increase the heat to medium and saute for 5-7 minutes, allowing the aloo gobi to absorb the flavors.
- Take a lid and cover the aloo gobi and let them cook on low flame.Stir infrequently to prevent the aloo gobi stick in pan and ensure even cooking.
