- 1 large onion, diced
- 2 cloves garlic, minced

- 2 medium potatoes, diced
- 1 cup green beans, trimmed and chopped
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 tablespoons vinegar or lemon juice
- 1 tablespoons soy sauce
- 1 tablespoons cornstarch or arrow root
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: additional vegetables like zucchini, cabbage, or spinach

Easy vegetable soup recipe
Heat olive oil/ vegetable oil in a large pot over medium heat. Add diced onion and saute till it translucent, fry them about 5 minutes.
Add the minced ginger and garlic and cook for another 1 minute till it leaves fragrant.
Now add carrots, celery, bell pepper, green beans, and sweet corns to the pot. Saute for 5-7 minutes, let the vegetables to slightly soft.
Pour in diced tomatoes with their juices and vegetable broth. Let the mixture to a simmer.
Once simmering, oregano, salt, and pepper and stir well to combine with the veggies.
Now add cabbage and cover the pot and till all the vegetables are tender. At this time add 2 cup of water to the veggies (as i’m making soup for 2 persons) and let them boil.
Now take a little cup and water, now take corn flour/starch or arrow root and mix till no lumps leave.
When the veggies turns tender and soft, pour the cornstarch to the vegetable soup recipe, boil and stir continuously till the soup turn slightly thick. Add sugar and salt as per your taste or you skip it.
Add vinegar, soy sauce saute it, now add Black pepper powder, chili flacks, cinnamon powder, it add more taste and fragrance to the vegetable soup recipe.
Taste the soup and adjust the seasoning if desired more salt and pepper.Once the vegetables are tender and the flavors have meld, turn off the heat and remove the pot. Make sure the vegetable soup recipe is flowing, cause after the soup will thicken after it cool down.
Garnish with spring onions and serve the vegetable soup recipe hot and warm.
*If you have hurry to make soup then you can make it over high flame for 10-15 minutes.
