Mixed Vegetable Recipe

Ingredients:

  • 1 cup diced potatoes
  • 1 cup sliced carrots
  • 1 cup diced bell peppers/ capsicum (colors as you want)
  • 1 cup green beans,cut into bite-sized pieces
  • 1 cup green peas
  • 1/2 cup baby corn(optional)
  • 1 cup cauliflower florets
  • 1 cup tomatoes,sliced
  • 100gm paneer
  • 1 onion, finely chopped
  • 1 onion petals cut
  • 4 cloves garlic
  • 1 inch ginger
  • 1 green chili
  • 4 tablespoons vegetable oil/olive oil/Butter(as per your need)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (as per taste)
  • Salt and pepper to taste
  • Fresh coriander for garnish
  • Fresh Cream

Instructions:

Preparation:

    • Wash and chop all the vegetables as specified.
    • Heat the oil in a pan on medium heat.

Prepare Vegetables

  • Firstly fry the vegetables half cooked with heated oil then take the vegetable out from pan for the mix veg recipe.

Saute Aromatics

    • Add cumin seeds to the heated oil and allow them to splutter.
    • Stir the chopped onion and garlic and ginger,green chili, saute until the onions turn soften and add tomatoes.
    • Add salt as per taste.
    • Take 1/4 of masala and make a smoothy paste of it.

    • Add a little oil to the pan and add the lest over masala
    • Introduce the turmeric powder, coriander powder, and red chili powder stir it well, add the gravy paste, cover it and stir it slowly.

Tender Vegetables

    • Add the vegetables – potatoes, cauliflower, bell peppers, green peas,carrots,baby corn, paneer and green beans.
    •  Continue sauteing for another 5-7 minutes until the mix vegetables are tender-crisp.

Seasoning and Final Touch

    • Season the mix vegetable with salt and pepper according to your taste.
    • Add sliced cut tomatoes to the mix vegetable and taking care not to overcook them.
    • Allow the mix vegetable to cook for an additional 2-3 minutes, to let the tomatoes remain slightly cooked.

Garnish and Serve

    • Give the mix vegetable a final gentle stir and transfer it to a serving dish.
    • Spread fresh cream over mix vegetable.
    • Sprinkle freshly chopped coriander over the mixed vegetables to add a burst of freshness.

NOTE*: WHOLE SPICES POWDER(5 cardamom, 5/6 black pepper and clove,1 inch cinnamon) HEAT A PAN IN LOW FLAME THEN PUT ALL SPICES INTO THE PAN, STIR IT FOR 2/3 MINUTES ,MAKE POWDER OF IT, AND STORE IT FOR A LONG TIME
