  •  1 whole chicken, cut into pieces (or your preferred chicken parts)
  •  2 cups buttermilk
  •  2 cups all-purpose flour
  •  1 tablespoon dried red chili
  •  1 tablespoon garlic powder
  •  1 tablespoon onion powder
  •  1 teaspoon cayenne pepper/ shimla mirch(adjust to taste)
  •  Salt and black pepper to taste
  •  Vegetable oil, for frying
  •  Optional: hot sauce for serving

First rinse the chicken pieces in cold water and take a paper towels and pat them dry. If you want to use a whole chicken, cut it chicken into pieces such as drumsticks, thighs, wings, and breasts.

Take a large bowl, pour the buttermilk,  turmeric powder, red chili powder or paprika, ginger and garlic paste, onion paste (optional), salt, and mix everything well. Now add the Chicken pieces to the mixture and coated evenly and make sure they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 1-2 hour, or overnight for best results. The buttermilk helps tenderize the chicken and adds flavor.. Keep it aside for marinate. 

*Note: You can take corn flakes, or bread crumbs for dredging mixture.

  2.  Heat the oil: In a large, heavy-bottomed pan or oven, pour enough vegetable oil to reach a depth. Heat the oil over medium-high heat till oil reaches a temperature of 350°F (175°C). You can use thermometer to measure the temperature.

  1. Sprinkle the chicken: Take out the chicken pieces from the buttermilk marination,Let the excess to drip off. Put each piece in the seasoned flour mixture, ensure that every piece is evenly coated from all sides. Shake off any excess flour and place the coated chicken on a wire rack to set perfectly.   2.  Fry the chicken: Carefully put the coated chicken pieces into the hot oil, be careful not to overcrowd the pan. Fry the chicken in batches, to maintain the temperature of the oil. Cook the chicken for about 12-15 minutes, turning occasionally, until it is golden brown and cooked through.
  3.  Drain and rest: Once the chicken is cooked, use tongs or a slotted spoon to transfer it to a paper towels to drain the excess oil from fried chicken.
