Ingredients:
- 2 cups whole wheat flour (atta)
- Water, as needed
- Salt, to taste
- Ghee or oil, for brushing (optional)
Equipment:
- Mixing bowl
- Rolling pin
- Tawa (flat griddle)
- Tongs or a kitchen towel for flipping
Step 1: Prepare the Dough (for 2 people)
- In a mixing bowl, take 2 cups of whole wheat flour (atta) and a pinch of salt, and mix everything well.
- Now add water to the flour slowly, with a little duration and knead it into a soft, flexible dough. It should be smooth and not sticky and make a round dough.
- When the dough comes together, knead it for another 5-7 minutes to make the gluten. This step is very important for soft chapatis to puff.
- Cover the dough with a light wet cloth or wrap or lid and let it rest for at least 15-20 minutes. This process make the gluten to relax and makes it easier to roll out the chapatis later.
Step 2: Divide and Shape the Dough
- After the resting the dough for sometime, uncover the dough and divide it into equal-sized portions. Size of the dough balls depends on your need or on how big you to make chapatis to be.
- Roll each dough into a smooth ball between the palms. Make sure about there no cracks left on the surface of the dough balls.
Step 3: Roll Out the Chapatis
- Take a tawa (flat griddle) and heat it over medium-high heat. Till the tawa is heating, lightly sprinkle flour on rolling pin.
- Take one dough ball and flatten the ball slightly with your palms. Dip the ball into the flour to coat both sides flour well.
- Place the floured dough ball on the work surface or rolling pin and start rolling it out the ball into a round shape, by pressing it gently. Rotate the dough and roll occasionally to ensure an even thickness.
- Roll the dough till it become a perfect round shape and about 6-8 inches in diameter, or your required thickness. If the dough sticks to the rolling pin or surface, dust it with more flour as needed.
- Repeat the process of rolling with the remaining dough balls, You can stack them on a plate and cover them with a kitchen towel to prevent dry out, or cooking it immediately one by one.
Step 4: Cook the Chapatis
- When the tawa is hot, place a rolled chapati on the tawa gently. Cook the chapati for about 30-45 seconds, or until small bubbles start forming on the surface of chapati.
- Flip the chapati using tongs or a kitchen towel or a ladle and cook the other side for another 30-45 seconds. You should start to see golden brown spots forming on the bubbles.
- Now, press down gently on the edges of the chapati to encourage it to puff up, by using the tongs or a kitchen towel. The chapati will start to puff up like a balloon, if it doesn’t then do not worry it will also give a perfect and tasty chapati.
- Once the chapati fully puffed and cooked from both sides, remove the chapati from the tawa and place it on a plate. Brush the cooked chapati with ghee or oil for added flavor and softness.
- Or, When the chapati starts forming bubbles, sprinkle oil/ghee over it and cook it from both side and spread oil from both side. Now your Chapati Recipe is ready to serve with veg or non veg recipes.
