Chicken Tikka Masala

Ingredients:

For the Chicken Tikka Masala:

  • 500g boneless, skinless chicken breasts or thighs
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon smoked paprika(Kashmiri lal mirch)
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil

For the Masala Gravy:

 

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped finely
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin(optional)
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon chili powder (adjust to taste)
  • 2 big crushed tomatoes
  • 1 cup heavy cream
  • Salt and sugar to taste
  • Fresh coriander for garnish

Instructions:

For the Chicken Tikka Masala:

1. Start cutting the chicken into bite-sized pieces, check chicken is cutting in uniformly for even cooking.
2. Take a bowl, add ginger-garlic paste, turmeric powder, red chili powder, smoked paprika, garam masala, yogurt, and salt mix them all to create a marinade masala.
3. Add the chicken pieces to the marinade, make sure that each piece is well-coated. Cover it with a lid and refrigerate it for at least 2 hours, or overnight for the flavor of the masala to infuse .
4.Heat a grill pan on gas , apply oil over pan and spread the marinated chicken to cook.

5.Grill the chicken until fully cooked, turn it occasionally for evenly cook from all sides , repeat this process for 15-20 minutes.

6. Once the process will done, side the chicken to set and let’s prepare the chicken tikka masala gravy.

For the Masala Gravy:

1. Take a large pan, heat vegetable oil over medium heat. Add finely chopped onions and saute until golden brown.
2. Add minced garlic and grated ginger, stir until the raw smell disappears.
3. Add cumin, coriander, turmeric, paprika, garam masala, and chili powder to the onion mixture. Allow the spices to toast for a minute, till leaves their aromatic flavors.
4. Pour in the crushed tomatoes and cook until the mixture thickens and the oil starts to separate from the spices.

5. Take out spices and make a smooth paste of the masala in the mixer.
6. Lower the heat and slowly add the heavy cream, stirring continuously to achieve a creamy consistency.
7. Add the sauce with salt and sugar to balance the acidity of the tomatoes. Adjust the chili powder if you want more spicy.
8. Carefully add the grilled chicken tikka pieces to the masala gravy, coating each piece evenly. cook it for an extra 10-15 minutes, allow the flavors to meld with chicken tikka masala.

9. Now the chicken tikka masala recipe is ready to eat. You can make it more watery or dry.

10. Garnish with Fresh Coriander.
