How to Cook Kadai Mushroom Recipe

Step 1

Preparation Of Kadai Masala

  • Heat a pan on gas over low -medium heat, then roast 1 tablespoon coriander seeds, 2 dried red chili, and green cardamom till start leaves the aroma and they are crispy.
  • Let the spices a side for 5-10 minutes to cool down.
  • Then take a grinder or mixer jar, add the spices, make a rough powder, and keep it aside.

Kadai Masala Paste

  1. Take Pan and 1 tablespoon oil heat it over medium flame, add chopped onions saute it until it soft.
  2. Now add cubed ginger garlic and saute it for 3-4 minutes
  3. Add chopped tomatoes, and salt. Saute it until tomatoes cook soft and everything mixes well.
  4. Add some cashew nuts to the masala.
  5. Cook everything well, then transfer the masala to a mixer jar, and make a smooth paste. You can use the same mixer jar for making masala paste. Set aside the paste.
  6. Take a frying pan, heat it over medium flame and add 1/2 tablespoon oil. Wash the mushrooms and cut it into slice and fry it for 2-3 minutes.
  7. Cut the capsicum (green, yellow, red) and 1 onion into dice sized and fry with the mushrooms till the aroma of veggies comes out.

How to Make Kadai Mushroom Gravy

  • Heat a clean Pan and 2 tablespoon of oil over low flame, add the kadai masala powder, give a slight fry then add kadai masala paste (onion, tomato paste), garam masala, turmeric powder, chili powder.
  • Saute the masala well until the masala cooked and leaves the pan.
  • Pour a cup of water to the masala and stir it, cover it with lid for some time to make thick gravy.
  • Saute it until the oil starts leaves the pan and float over the gravy, now add fried mushrooms, capsicums, and onions and mix everything properly. Make sure that the veggies are coated with masala and absorb the spices well.
  • Let the kadai mushroom recipe cooked for another 3-5 minutes and you can adjust the gravy as per your need.
  • Now add salt if needed, add fenugreek leaves crushed by palm, and remove the kadai mushroom recipe to a dish.
  • Garnish with slit green chili, freshly chopped coriander, and sliced cut ginger. You can also add fresh cream on top for better look and taste.
  • Serve it with Rice, roti, and naan.

Dry Kadai mushroom

Ingredients

  1. Mushrooms
  2. Oil
  3. Onions
  4. Ginger-garlic paste
  5. Tomatoes
  6. Green chili
  7. Dried red chili
  8. Cardamom
  9. Coriander seeds
  10. Capsicum (Red, Yellow, Green Bell peppers)
  11. Turmeric powder
  12. Red chili powder
  13. Fresh coriander
  14. Salt

If you want make it Dry kadai mushroom recipe:

  • Make a kadai masala powder of 1 tablespoon coriander seeds, 2 dried red chili, and green cardamom.
  • Take a pan fry mushrooms, capsicums, and onions.
  • Add 2 tablespoons oil to the pan and heat it over medium flame, now add chopped onions and cook till turns golden brown color.
  • Add ginger- garlic paste and saute until the raw smell vanishes. Add tomatoes and cook till it turns soft.
  • Now add turmeric powder, chili powder, kadai masala powder and salt, mix everything and pour 1 cup water to, stir it till the masala leaves oil and turns into thick gravy.
  • Add fried mushrooms, capsicums, and onions and mix everything perfectly.
  • Remove it from heat. Garnish kadai mushroom recipe with green chili, and fresh coriander leaves.

Step 3

Ingredients

  • 500 grams of fresh button mushrooms
  • 1 tablespoon yogurt/ curd
  • 2 tablespoons oil
  • 1 tablespoon butter
  • 2 medium-sized onions, chopped finely
  • 2 green chilies, slit cut
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 large tomatoes, finely chopped
  • 1 green bell pepper (capsicum), thinly sliced
  • 1 red bell pepper (capsicum), thinly sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds, crushed
  • 1 teaspoon dried fenugreek leaves (kasuri methi)
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Mushroom Marinade:

  • 500 grams of fresh button mushrooms
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon yogurt/ curd
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste

Mushroom Preparation:

  • Begin by cleaning the mushrooms and slicing them evenly.
  • Take a bowl, combine the sliced mushrooms with ginger-garlic paste, yogurt, red chili powder, turmeric powder, and salt. Mix well, ensure the mushrooms are evenly coated with the marinade. Let it to marinate for about 15-20 minutes.

Cooking the Gravy:

  • Heat oil and butter in a kadai or pan over medium heat.
  • Add cumin seeds and crushed coriander seeds to the oil. Let them to splutter and release their fragrant.
  • Toss the finely chopped onions and green chilies. Saute the onions until turn golden brown color.
  • Add ginger-garlic paste and saute till the raw smell dissipates.
  • Add the chopped tomatoes and cook until they soften and the oil starts to separate from the pan.
  • Add the sliced green, red, and yellow bell peppers (capsicums) into the masala. Saute for some extra minutes until they are slightly tender.
  • Now, gently add the marinated mushrooms along with the remaining marinade to the pan. Stir well to mix the mushrooms with the spices.
  • Add salt as per your taste and sprinkle dry fenugreek leaves (Kasoori Methi) over the kadai mushroom recipe.
  • Cover the kadai and let the mushrooms to cook in the tasty gravy for about 8-10 minutes, let them absorb the essence of the masala.
  • Once the mushrooms are tender and cooked perfectly, sprinkle garam masala over the dish and give it a final stir.
  • Garnish with fresh coriander leaves and green chili to give a burst of freshness and taste.
